In this article, we'll explore two delectable vegan one-pot curry recipes - a hearty lentil curry and a flavorful chickpea and vegetable curry. These dishes are perfect for busy weeknights when you're short on time but still want a wholesome and satisfying meal.
1 A recipe for one-pot lentil Curry.
There are ingredients.
1 cup of lentils.
finely chopped onion
2 garlic cloves.
A piece of ginger is grated.
1 part curry powder to 1 part water.
1 spoon ground cumin.
1 spoon ground Coriander
1 cup of curry
1 can of tomatoes.
2 cups vegetable soup.
1 cup coconut milk.
Salt and pepper to taste.
Fresh cilantro for a drink.
Instructions
1 Put a large pot in the high heat. Add the chopped onion and cook it for 5 minutes.
2 Add the garlic and ginger to the pot and cook for an additional minute.
3 The curry powder, cumin, Coriander, andTurmeric should be put in a pan and let the spices toast for a minute.
4 Add the diced tomatoes with their juices. Combine all the ingredients.
5 Add the lentils to the pot after rinsing them. To make it taste better, add salt and pepper.
6 Bring the mixture to a boil, then reduce the heat to low and let it cook for about 25 minutes until the lentils are tender.
7 The lentil curry is served hot and has fresh cilantro. It pairs well with both basmati rice and naan bread.
2 One-Pot Chickpea and Vegetable Curry.
There are ingredients.
1 part coconut oil to 1 part water.
1 onion, diced
2 garlic cloves.
1 bell pepper is diced.
2 carrots are diced.
1 zucchini, diced
1 part curry powder to 1 part water.
1 spoon ground cumin.
1 spoon ground Coriander
1 cup of curry
chickpeas drained and rinsed
1 can of tomatoes.
1 cup vegetable soup.
Salt and pepper to taste.
Fresh cilantro for a drink.
Instructions
1 In a large pot, cook coconut oil. Add the diced onion and cook it for 5 minutes.
2 The vegetables will cook for an additional 5 minutes until they are slightly tender.
3 The curry powder, cumin, Coriander, andTurmeric will coat the vegetables in a minute.
4 Add the drained chickpeas, diced tomatoes, and vegetable soup. Season with salt and pepper.
5 Bring the mixture to a boil, then reduce the heat to low and let it cook for 15-20 minutes, allowing the flavors to meld together and the vegetables to cook through.
6 This curry is served hot and has fresh cilantro. Enjoy it alone or with fragrant basmati rice or quinoa.
